If the police officer does not show up for traffic court trial, shouldn't the case be dismissed?

That is just hear say fighting this could last a very long time you might end up going to court 10 or 12 times since you pleaded not guilty you have no choice but to go each time you are ordered to other wise they could get you for contempt and chances are the judge is going to side with the cop so now part of your fine will include each day of work you miss HAVE A NICE DAY :)
